Barry was shooting skeet in the 'boro this morning, so Branner and I had to occupy ourselves. We played, watched the Curious George movie, went to the Y, had a lunch date and stopped by the bank. Happy Saturday, friends!

In Target a few weeks ago, I saw these adorable (and much more affordable than the Hunters I had my eye on for B) rain boots. They are so preppy and so him! He thinks they are so cool and was excited to wear them for the first time last Saturday!

Rotel Chicken Spaghetti



Another Pinterest find! I'm making this tonight (with a few minor tweaks), and I can't wait to taste it!


3-4 large boneless chicken breasts (or rotisserie chicken)
1 can (10 3/4 ounce) Cream of Chicken Soup
1 can (10 ounce) Rotel Diced Tomatoes with Green Chilies
1 clove garlic, minced or 1/2 tsp. garlic powder
 1/2 tsp. onion powder
1 tablespoon Margarine or butter
1 – 8 ounce Velveeta cheese, cubed
8 ounces spaghetti, cooked and drained

Cut up chicken into bite size pieces.In a large skillet melt butter or margarine. Add cubed chicken, garlic & onion. Cook over medium-high heat until chicken is no longer pink and no liquid is left in skillet. Stir in soup, cheese and Rotel Tomatoes. Reduce heat to low, and cook until the cheese melts, stirring constantly. Stir in spaghetti and pour into a lightly greased 2 quart casserole dish. Bake at 350 degrees for 30 minutes or until heated through. 



My minor tweaks: I used the Healthy Cream of Chicken soup, Velveeta made with 2% milk (and, you could probably use 4-6 oz and be just fine) and quinoa spaghetti. The results? DELISH!!!!

For Sale

I haven't mentioned it here, but our house has officially been on the market for (almost) a week. YAY! Now, somebody buy it so Barry can buy me a new (to us) house!

Anyway, as my luck would have it, crazy things have happened. I know, right?! It's only been on the market a few days, and here are some of our experiences...

1. Our realtor held an Open House Sunday afternoon. A man who is selling his house down the street decided to come. He proceeded to piss my realtor off by telling the other people there that we didn't remodel the kitchen, it was done before we moved in (I'm not sure what that has to do with anything. We never said we remodeled it.), asked my realtor REALLY LOUDLY if she actually thought we could get what we were asking for it (to which she replied, "Sir, if I didn't think we could get what we are asking for it, I would not have listed it at that price.") and tried to get some of the people looking at our house to come look at his. The funny thing is, he listed his house at the same price two years ago (yes, you read that right--two years ago), when he first put it up on the market. His kitchen nor his bathroom nor anything in his house has been updated. Not sure why he is so concerned with our house.

2. The centralized scheduling company that is being used to book our showings had our realtor's number listed wrong. Whoever has this number declined two of our showings. Luckily, our realtor is super-duper-on-top-of-things, so the showings still happened. Good thing we communicate so much, or we could have missed out on those buyers seeing our house!

3. The kicker. SOMEONE STOLE THE REAL ESTATE SIGN OUT OF OUR FRONT YARD LAST NIGHT. For real. None of my realtor friends nor our agent have ever had this happen before.

I swear, I could not make this stuff up! I will keep you all posted on further ridiculous/hilarious happenings!

Country Club Chicken

Barry and I are celebrating Valentine's Wednesday night instead of tomorrow. We'll have a family celebration Tuesday, for which I will make this delightful meal, and take it out on the town for a fancy dinner on Wednesday. I'm looking forward to both!

Country Club Chicken

1 lb spaghetti (I'm trying something new! Quinoa spaghetti...I'll let y'all know how it turns out!)
4 chicken breasts
1 lg onion
7 oz mushrooms
2 cans Campbell's Cream of Mushroom soup (Using the lower fat version)
4-5 slices of bacon (I'm using turkey bacon)
1/4 c dry white wine
2/3 c shredded sharp cheddar
1 apple
butter or oil
salt and pepper

Preheat oven to 350.

Chop the onion. Clean and chop the mushrooms. Peel and chop the apple.

Season the chicken breasts with salt and pepper.

Cook the bacon, but don't clean out the pan. Drain bacon on paper. Add some butter to the pan and brown the chicken on both sides. Transfer to casserole dish.

Cook the onions for 3-5 minutes. Add mushrooms and cook for another 3-5 minutes. Add apple and cook for 3-5 minutes. Season with a pinch of salt and pepper and crumble bacon into pan. Add white wine, cans of soup and cheddar cheese. Pour over the chicken.

Bake for 23-30 minutes.

Prepare spaghetti noodles.
