House Inspiration

No closing date yet, but a few things that have caught my eye on Pinterest for the new house! We've hired my good friend, Lauren, for design help. I'm so excited to see what she comes up with!

Fashion Friday--PINspiration

Just a few things I've seen on Pinterest lately that I'm planning to channel using my own wardrobe!

Oh, oh, oh those jeans! They are perfection. Wish I knew what brand they are!

I am basically obsessed with white jeans. I have two pairs: flares and skinnies. I can't get enough of either! I love the bright colors and neutral shoes. Swoon.

Currently searching for the perfect pair of neon pink shorts! Plus, gingham?! PRESH!

I ADORE Blair's style. ADORE. This is actually a dress and skirt combo. She is so creative with her outfits, and is always on the mark. Oh, and, those shoes. Le sigh. Gingham, I love you!

Spicy Chicken Rigatoni

Another huge success inspired by Pinterest! Highly recommend this recipe! I modified; my recipe is the one described.

Spicy Chicken Rigatoni

1/4 c olive oil
1 T crushed red pepper
Salt and pepper to taste
1 T garlic
2 chicken breasts, cut into 1" pieces
5-6 baby portabella mushrooms
1 26 oz jar Marinara sauce
1 c Light Alfredo sauce
1 lb whole wheat Rigatoni

Heat olive oil, crushed red pepper, salt, pepper and garlic for about 5 minutes so that the flavors infuse into the oil. Add the chicken. Cook on medium high heat to an internal temp of 165. Add mushrooms and allow to cook for a few minutes. Drain and add marinara and alfredo sauces. Heat through. Serve over rigatoni. Enjoy!

Note: I will probably add broccoli and a few other veggies next time!

Country Club Chicken

Barry and I are celebrating Valentine's Wednesday night instead of tomorrow. We'll have a family celebration Tuesday, for which I will make this delightful meal, and take it out on the town for a fancy dinner on Wednesday. I'm looking forward to both!

Country Club Chicken

1 lb spaghetti (I'm trying something new! Quinoa spaghetti...I'll let y'all know how it turns out!)
4 chicken breasts
1 lg onion
7 oz mushrooms
2 cans Campbell's Cream of Mushroom soup (Using the lower fat version)
4-5 slices of bacon (I'm using turkey bacon)
1/4 c dry white wine
2/3 c shredded sharp cheddar
1 apple
butter or oil
salt and pepper

Preheat oven to 350.

Chop the onion. Clean and chop the mushrooms. Peel and chop the apple.

Season the chicken breasts with salt and pepper.

Cook the bacon, but don't clean out the pan. Drain bacon on paper. Add some butter to the pan and brown the chicken on both sides. Transfer to casserole dish.

Cook the onions for 3-5 minutes. Add mushrooms and cook for another 3-5 minutes. Add apple and cook for 3-5 minutes. Season with a pinch of salt and pepper and crumble bacon into pan. Add white wine, cans of soup and cheddar cheese. Pour over the chicken.

Bake for 23-30 minutes.

Prepare spaghetti noodles.

Pinterest

As if Facebook, my 3 blogs and Twitter weren't enough to keep me occupied, I have gone and joined Pinterest. If you don't know what it is, it's like a virtual corkboard where you can "pin" anything from the web that strikes your fancy. It's awesome. It's fun. It's ADDICTIVE. I LOVE IT! If you are already on there or decide to join, my username is Ashley Kirby; would love for you to follow me!!!
